This tour option is designed to enable visitors to discover the ancient oil production cycle, the ancient Masseria farmstead and its flavours.

Salento has so much to offer to anyone passionate about art and history or simply to anyone curious to discover more about this absolutely entrancing land. This tour option is designed to enable visitors to discover two of Salento's most prestigious treasures: its Olive Oil and Wine. The tour begins at 9:30 at Torre Santa Susanna's intriguing underground oil mill. Accompanied by a guide, visitors will be able to retrace the ancient olive oil production cycle, starting from the exclusive fruits produced by the region's majestic, sacred and legendary centuries-old olive trees throughout the various eras of human history.
The tour then continues at Masseria Altemura. In addition to the vineyards and olive groves, which feature in numerous local stories and legends, visitors are guided through two extraordinary places: the ancient 17th-century farmhouse, perfectly renovated and restored according to its layout original, is an interesting testament to the traditions of Salento, and the Estate's new sustainable winery, inaugurated in 2012. The facility was designed in line with the most up-to-date principles of eco-friendly architecture while still retaining the sobriety, charm and typical characteristics of Apulian architecture.

The tour ends at the table: the tasting menu gives visitors the opportunity to taste four different olive oils produced in the area and four iconic wines by Masseria Altemura: Fiano, Aglianico, Sasseo and Zinzula.
